What to Look for When You're Shopping for Water Kefir

Water kefir is one of the easiest and most enjoyable ways to support your gut — but not all kefir on the shelf is equal. Some brands look the part, but when you check the label or how it's stored, you quickly realise it's more of a flavoured soft drink than a living, probiotic-rich ferment.

If you're buying water kefir (or comparing brands), here are the key things to check.

Wild Pantry Liverpool Water Kefir 750ml bottles and 380g jars

1. Glass Bottles, Not Cans

Glass matters. Not just for the planet, but for the kefir itself.

Water kefir is a live drink. It continues to ferment over time, especially if it’s not chilled. Glass is a stable, non-reactive material, meaning it doesn’t interact with the drink or leach anything unwanted.

Cans can be lined with plastic or aluminium coatings, which may break down over time, especially with acidic or fermented liquids. This isn’t something we want near a live product or our guts.

We bottle all Wild Pantry kefir in glass, and we even offer a bottle return scheme to reuse wherever possible.

2. It Should Be in the Fridge

If a water kefir is sitting warm on a shelf, it's not really water kefir anymore.

True water kefir is raw and unpasteurised. That means it contains live cultures that need to be chilled to stay stable. If it’s shelf-stable, it’s likely been pasteurised (heat-treated), which kills off most or all of the good bacteria.

Refrigeration is a sign of life. If it’s not in the fridge, chances are it’s more soda than ferment.

3. Check the Ingredients Label

A good kefir has simple ingredients. Ours include:

  • Filtered water

  • Organic sugar (used during fermentation)

  • Real fruits, herbs or spices (for flavour)

  • Nothing else

Things to avoid:

  • Natural flavourings

  • Preservatives (like potassium sorbate)

  • Stevia or sweeteners

  • Colourings

If you wouldn’t add it at home, it doesn’t belong in your kefir.

4. Understand the Sugar

Sugar is used in water kefir — it’s how the live cultures feed and grow. But that sugar gets mostly consumed during fermentation, leaving behind a naturally low-sugar drink.

Here’s the difference:

  • First ferment sugar is necessary, it feeds the kefir grains.

  • Added sugar after fermentation (like juice concentrates, syrups or cane sugar) is optional — and often used to boost taste cheaply. But this counts as added sugar and can be disruptive to your gut if overdone.

Look for water kefir with less than 4g of sugar per 100ml. That’s our hard maximum at Wild Pantry, and it’s where you get the benefits without feeding the bad bacteria in your gut. Our brews sit between 2.5-3.5%.

5. Look for Raw and Unpasteurised

This one’s simple. If a brand doesn’t clearly say the kefir is raw or unpasteurised, it probably isn’t.

Raw means:

  • More probiotic diversity

  • More live microbes per bottle

  • Real fermentation (not vinegar or soda mimicry)

We never pasteurise our kefir, the fridge is our preservative.

6. Know Who Made It

Small batch usually means better care.

Most supermarket water kefir is brewed centrally, stored for weeks, and bottled for shelf life. We make ours every week in small batches from our Wirral kitchen and deliver it ourselves.

We talk to our customers. We hear what flavours they love. We return bottles on the doorstep. That level of attention isn’t possible in mass production.
