Why Are Some Wild Pantry Water Kefir Drinks Still Instead of Sparkling?

One of my favourite conversations at markets usually starts the same way. Someone picks up a bottle of our Mojito Water Kefir, gives it a gentle shake and asks,

“I thought water kefir was supposed to be sparkling?”


It’s a fair question.


Most people have discovered water kefir through social media, where every bottle seems to hiss as it’s opened and foam spills over the top.


For a lot of producers, that fizz has become the headline. At Wild Pantry, we’ve taken a different path. Some of our drinks are naturally sparkling.

Some are intentionally still. Every single one is raw, unpasteurised and alive with live cultures.


The difference isn’t about quality. It’s about purpose.


The decision started long before Wild Pantry


Long before Wild Pantry existed, I spent years struggling with acid reflux which led to Barretts Osophagus a pre-cancerous condition.


At its worst, it wasn’t just spicy food or coffee that caused problems. Anything fizzy became difficult. Sparkling water. Soft drinks. Even a few mouthfuls could leave me regretting it.


When I eventually discovered fermented foods and water kefir, they became part of rebuilding my gut health. It wasn’t an overnight change and I would never claim water kefir was the reason everything improved. Life is rarely that simple.


But there was one problem; the bubbles. I loved what water kefir represented.

I just couldn’t always enjoy heavily carbonated drinks. That stayed with me.


Years later, when Alice and I started Wild Pantry, we kept coming back to the same question.


If someone is looking after their gut, why should they have to avoid fermented drinks simply because they don’t get on with carbonation? That question shaped our range from day one.

Still doesn’t mean less fermented


One thing we hear quite often is, “So have the still ones lost their live cultures?”

No, tot at all.


Our still water kefir goes through the same fermentation process as our sparkling drinks. It is still naturally fermented. Still raw. Still unpasteurised. Still full of live cultures.


The only difference is how we finish the brew. Instead of encouraging extra carbonation, we brew certain flavours to stay softer and smoother to drink.


The fermentation is still doing its job.


We’ve simply chosen not to make every bottle fizzy.


We brew every flavour differently


One thing we’ve learnt over the years is that recipes should be treated individually. Not every flavour wants the same finish.


Our Elderflower Champagne is naturally sparkling because that’s exactly what the drink calls for. The gentle bubbles lift the floral notes and make every glass feel like a celebration.


The same goes for our Wild Berry, the sparkle suits it. But other recipes tell a different story.


Our Mojito is built around fresh lime and mint.


Our Piña Colada is inspired by smooth tropical flavours.


Our Ginger & Turmeric is one people often reach for when they’re already thinking about supporting their gut.


Our Strawberry & Kiwi is fresh and fruit forward.


For those drinks, we found that keeping them still created a softer drinking experience and let the flavours speak for themselves. They simply taste better that way.

Thinking about people like me


When we launched Wild Pantry, I kept thinking back to the days when acid reflux controlled so much of what I drank. I know I’m not the only one.


Lots of people avoid carbonated drinks because they trigger discomfort. Others simply don’t enjoy fizzy drinks. Some are looking for a gentler option.


know from my own experience that removing the bubbles made fermented drinks much easier for me to enjoy.


If our still range helps someone else discover water kefir because it feels more comfortable to drink, then I’m really glad we make it.


We don’t chase trends


There is a temptation in fermented drinks to make everything fizz as much as possible.

A dramatic bottle opening looks great on social media. But that’s never been why we make water kefir.


We’re more interested in creating drinks people genuinely want to come back to. Sometimes that means a naturally sparkling Elderflower Champagne. Sometimes it means a still Mojito that reminds you of sitting in the sun with fresh mint and lime. Sometimes it means a bottle of Ginger & Turmeric that someone with reflux feels happier reaching for.


Different people need different things, we think that’s worth brewing for.

So, should water kefir always be sparkling?


Not at all. Natural sparkle is one expression of water kefir. Still water kefir is another. Both are authentic. Both can be raw, unpasteurised and full of live cultures.


At Wild Pantry, we don’t start by asking how fizzy a drink should be. We start by asking one simple question. “What would make this bottle the most enjoyable to drink?”

Sometimes the answer is bubbles. Sometimes it isn’t. And that’s exactly how we intended it.
